My Favorite Quinoa Salad Recipe


Are you ready for this?  This is one of my all time favorite recipes.

This will make a huge portion of salad which keeps well in the fridge.  Top it with sliced avocado/guacamole and corn/tortilla chips if you want.  The flavors mingle really well together!  I can’t get enough of this one.


1 cup uncooked quinoa
2 cups water
1 cucumber
1/2 red onion
1 medium tomato, seeded
1/2 cup cilantro
1 tbsp olive oil
1 tbsp lemon juice
Salt and Pepper, to taste
  1. Rinse the quinoa and place in saucepan.  Add water.  Boil, then simmer for 15 minutes.  Let cool.
  2. Chop cucumber, red onion, tomato, and cilantro (I chop my ingredients pretty small because that is how I like them but you can do a more coarse chop if desired).  Combine in a bowl.
  3. Add olive oil and lemon juice to your chopped veggies.
  4. Once quinoa is cooled, add to the veggie mix.  Stir to combine and season with salt and pepper.

This recipe makes approximately 6 servings @ 4 points each.  Yum!
