Are you ready for this? This is one of my all time favorite recipes.
This will make a huge portion of salad which keeps well in the fridge. Top it with sliced avocado/guacamole and corn/tortilla chips if you want. The flavors mingle really well together! I can’t get enough of this one.
Ingredients:1 cup uncooked quinoa 2 cups water 1 cucumber 1/2 red onion 1 medium tomato, seeded 1/2 cup cilantro 1 tbsp olive oil 1 tbsp lemon juice Salt and Pepper, to taste Directions:
- Rinse the quinoa and place in saucepan. Add water. Boil, then simmer for 15 minutes. Let cool.
- Chop cucumber, red onion, tomato, and cilantro (I chop my ingredients pretty small because that is how I like them but you can do a more coarse chop if desired). Combine in a bowl.
- Add olive oil and lemon juice to your chopped veggies.
- Once quinoa is cooled, add to the veggie mix. Stir to combine and season with salt and pepper.
This recipe makes approximately 6 servings @ 4 points each. Yum!
