I had roasted a spaghetti squash a few days ago and needed to use it up along with some other ingredients. I’ve been on a “bowl” kick lately. I love a bunch of flavors mingling together! I started pulling out ingredients that I thought would work well together and here is what I came up with…
-3 Jimmy Dean turkey sausage
-1 cup roasted spaghetti squash
-1tsp olive oil
-1tbsp chicken broth
-1/4 cup sliced mushrooms
-1/2 cup fresh spinach leaves
-garlic powder, onion powder, oregano, red pepper, and salt to season
I sliced up the sausage and threw it in the pan with olive oil. Browned that for a bit and then added the sliced mushrooms until they were cooked through. Then I added my cooked spaghetti squash and the chicken broth to keep everyone from drying to a crisp. Once that was heated through I added the spices to taste and spinach until it was wilted. Serve up and add Sriracha on top if you like I spicy like I do. No joke!! This was GOOD!
I ran the ingredients through my WW recipe builder and it came to 5P+ for a huge bowl. Great deal and filling! I’m sure different veggies would work in this as well. Just depends on what your taste preferences are.
